Calculate Volume is a functionality you need when measuring stockpiles. Each stockpile has a value and requires a separate calculation. So, you will have one cut-and-fill map for each pile. Because the piles change form and position, it makes no sense to measure how the piles change over time. You trace a reference surface around the piles for each specific moment in time.

Volume Difference is a functionality you need when you compare multiple drone surveys, typically to monitor an earthworks project from start to finish. With Volume Difference you have one cut-and-fill map for your work area. You pin the cut-and-fill map to all other terrain states so that you can easily monitor progress when you change to a terrain state that represents another moment in time.
